ingredients

1 1/2 pound ground beef
3/4 cup dry rolled oats
1/4 cup chopped onion
1 1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup tomato juice
1 egg, beaten

directions

Preheat the oven to 350 degrees F.

In a bowl, mix together the beef, oats, onion, salt, pepper, tomato juice, and beaten egg. Mix until just combined (do not overwork the meat).

Pack the meat into a loaf pan. Place in the oven and bake at 350 degrees F for 1 hour 15 minutes.

Remove the pan from the oven and let stand for 5 minutes before slicing.

recipe tips

Let the meatloaf rest for a few minutes after baking for easier slicing.

For a crispy top, broil the meatloaf for the last few minutes of cooking.

Leftover meatloaf makes great sandwiches - slice and reheat or enjoy cold.

Try a glaze on top, like a mixture of ketchup, brown sugar, and mustard, applied in the last 15 minutes of baking.

If the mixture seems too wet, add a bit more oats or some breadcrumbs.

For a moister meatloaf, cover with foil during baking and remove foil in the last 15 minutes.

Remember, meatloaf is a great dish for hiding extra veggies – great for picky eaters!

common recipe questions

Can I substitute the ground beef with another type of meat?

Yes, you can use ground turkey, chicken, or pork, but the flavor and texture will vary a little.

Is it necessary to use rolled oats?

Rolled oats help bind the meatloaf and add texture. You can substitute with breadcrumbs if necessary.

What can I use instead of tomato juice?

You can use tomato sauce, V8 juice, or even a small amount of ketchup diluted with water.

How do I know when the meatloaf is fully cooked?

The internal temperature should reach 160 degrees F when checked with a meat thermometer.

Can I make this recipe in a different type of pan?

You can shape the mixture into a loaf and bake it on a rimmed baking sheet or in a baking dish, but cooking times may vary so start checking it for doneness after about an hour.

What other flavors can I add to the meatloaf?

Try adding herbs like parsley or thyme, garlic powder, or Worcestershire sauce.

What's the best way to mix the ingredients without overworking the meat?

Use your hands to gently mix until just combined, being careful not to compress the meat too much.

Can I prepare this meatloaf in advance?

You can mix the ingredients and store them in the refrigerator overnight before baking.

Can I freeze the raw meatloaf?

If the ground beef is fresh (never frozen), then you can freeze the raw, mixed meatloaf. If the ground beef is previously frozen then it's not advised to freeze it raw. You can, however, freeze it after cooking. Just let it cool completely then store in an airtight container for up to 3 months. Thaw overnight in the refrigerator and reheat in the oven or microwave.

I have been searching for this recipe. I lost mine. I have tried a couple I found but not the same. I love it my kids love it. I have made it with 1lb lean ground beef and than used 1/2lb ground pork, otherwise the same ingredients. I am so happy to have the originalThank you

I substitute the tomato juice with cream of mushroom soup (after I have deputies the soup with 1/ can ater). Also I use a fast iron pan. Put the meatloaf in the pan, surround it with the rest of the soup mixture. Then around the sides of the pan I put sliced potatoes. It's to die for

Love this recipe, only I substitute canned spaghetti sauce and bake it in microwave for 20 min at 50% power. I use 9" Pyrex dish or a pie plate to bake it in. Favorite meal for my grandaughters!

This recipe makes a traditional meatloaf that is good tasting as well as good for you. It's secret ingredient is Quaker Oats. They keep the meatloaf from crumbling, and hold in all the juices, for a rich full flavor. Serve with mashed potatoes and green beans, or branch out by serving with an exotic grain like bulgar and broccoli or broccolini.

My Mom fixed this one too all our childhood and I made it for my family for years. Still making it for the Hub and I. Just cant get enough of it !!!! Its so yummy. Will not order it out in restaurants.. always too mushy... Love this one too much !!!

This meatloaf is one of the best you'll ever had. The recipe has been around forever (looks like many of us remember it from when we were kids) and it's really a no-fail recipe. you can dress it up with other spices/seasonings but if you stick with the base recipe you can't go wrong.

I used tomato soup instead of juice because of what I had in the cabinet, but followed the recipe otherwise. My husband was so amazed by the meatloaf, he left me a voicemail about how it was "the best meatloaf he ever had", and also sent me a text that the meatloaf was "amazing!" He rarely thanks me for dinner, let alone raves about it. Thanks for the recipe!!!!!

I didn't have any crackers to make my regular meatloaf, so went in search of a recipe and found this. I must say I was a little leery about oatmeal because I wasn't a fan of my Mom's meatloaf that used oatmeal.I may never make my "old" meatloaf recipe again. I loved this!!! It was so easy to prepare using the small bowl of my food processor for the peppers-as suggested by another reviewer-and onions. Smelled delicious cooking. I used San Marzano strained tomatoes and as I'm writing this I realize I forgot the egg!! Didn't seem to matter. I didn't bother with the topping as I wasn't having potatoes, plus didn't want the extra calories. I will definitely make this again!!!

My Mom always put bacon strips diagonally across the top & then put catsup on the bacon. Becausse we're serving a lot of folks, I just form a loaf by hand and bake in a 13x9 pan.

Just as the rest of you, I grew up on this recipe and I consider it to be the best ever meatloaf! Over the years I've altered the recipe to suit the times or my tastebuds. I occasionally substitute ground turkey for the ground beef. And I always add 2-3 Tbsp. of either Worcestershire sauce or A-1. My family has a difficult time deciding which meat they prefer, both are great.

  15. thegreataunt October 27, 2012

Agreed! Best meatloaf recipe ever. I now put down half of the meat, then a hardy layer of cheese, then the rest of the meat and then put barbeque sauce on top for last 15 minutes. YUUUMMMMY!

My favotite recipe. For something really great, make patties out of the meatloaf, fry them like hamburgers, then in the last couple of minutes lay some Velveeta on top and let it melt. Serve on buns with a little mayo and a slice of Vidalia onion. Best burger you'll ever eat!

  17. lazycook REVIEW:
    April 1, 2012

I love this recipe. It is so easy. I can't eat oats because of a gluten issue so I substitute quinoa flakes. I also substitute V8 for tomato juice just because I like the flavor better. Also I used powdered onion because I am lazy and don't really care for onions too much anyway. I put this in casserole dish because it cooks faster and after I take it out I spoon on some tomato sauce or salsa on top which ever I have around.

This is a super basic recipe. The only addition I Make is a slosh of Worcestershire. I top the meatloaf with equal parts of mustard/katsup, brown sugar. I think I can get 6 servings from this recipe, so fewer calories/serving.

I use this recipe also but add a little dijon and allspice. When half way thru the cooking time I pour some beef broth over and again near end of cooking time. This makes a great gravy with your meatloaf.

I grew up on this version of oatmeal (age 60 now)! The onions were coarsely cut, not finely. We used tomato paste and 1/4 cup of water instead of the tomato juice--it added a more robust flavor. As am adult I poured either tomato sauce or diced tomatoes (depending upon whim). It wasn't until later in life that I tasted meatloaf made with breadcrumbs--to me, the texture was mealy and unappealing.

If your a meat loaf lover then this is the one for you. For all of my life anyone I have served this to has commented "This is the best meat loaf I have ever had" then always ask what's in it. When they hear it has oatmeal in it you can see the surprise in their eyes. I make as recipe says and the last 15 minutes I coat top of meat loaf with Heinz Chile Sauce, Always moist and tasty. I've lost count how many times I've been called for this recipe. It's a oldie but always a goodie :)

When growing up I had to start dinner while my mother was at work. I had to make meatloaf one time and we didn't have any bread. I saw the recipe on the oatmeal box and went with it. I didn't tell anyone I changed the recipe for fear that if my brothers knew there was oatmeal in it they wouldn't eat it. They ate it and loved it, and said that the meatloaf from now on had to be made this way. It was a hit and from that day forward the meatloaf was made this way. My oldest brother as myself still make meatloaf using this recipe to this day. It is moist and comes out good every time.

THE BEST Meatloaf Recipe Hands Down. We add a glaze of brown sugar and dijon mustard (blend to taste) to the top about 15 minutes before it finishes cooking.

Try a mixture of chili sauce and ketchup (or just the chili sauce) for a great topping on the loaf. I use Spicy V8 juice. About 40 years ago I figured out that you could do almost anything to the basic recipe and get something speical with a few veryations. Try using pizza sauce with shredded mozzerella cheese and black olives and mushrooms mixed in with the beef - save some of the pizza sauce for topping. It's a great change for people who say - I don't like meatloaf!

I just got off the phone w/ my MOM for the recipe. I had a hankering to cook this up! Just thought I'd see if I could find it on line!!! Thank you. Please indulge, it's a winner.

I got this recipe from my mother-in-law when I first married my husband. I have used it ever since. It's easy and comes out moist and delicious every time. I, too, use V-8 juice instead of plain tomato juice. Family favorite for 50 years! For an extra treat, combine 1 cup catsup with 1/2 cup of honey and pour over meatloaf before baking. So good!

Use V-8 instead of tomato juice. Use one pkg onion soup mix or any other like beefy onion or onion mushroom instead of onions and spices. Super simple and so delicious!

I agree with other reviewers. A meatloaf from childhood that my adult children grew up with. Absolutely the best meatloaf ever. Moist and delicious. I substitute V-8 Vegetable Juice for the tomato juice. More flavor. As for regular oats or quick cooking, you can use either. I usually use the quick cooking kind.

    December 14, 2009

Yup, this was my mom's meatloaf, too. I requested it for my birthday every year. I've used both, but prefer the regular rolled oats, not instant. Also, as I've aged and my palate likes things a little zippier, I use medium chunky salsa instead of tomato sauce and it works great. The ketchup is for the top, as a glaze. Lean ground beef works best.

this is the meatloaf my mother used to make our family as well. she actually still has the recipe she cut from the cardboard box (it does call for tomato juice) in the 70's at some point. i agree it's the BEST meatloaf ever -- just say "no" to breadcrumbs! i like to grate carrots into the mix to get some veggies in there. sandwiches the next day are the best!

    October 29, 2009

I've used this recipe for years. I got it from a box of Quaker Oats. I use an 8 oz. can of tomato sauce instead of the tomato juice. I couldn't find the panel that I cut from the oatmeal box so I googled the recipe. The recipe I got from Quaker Oats site calls for catsup. This recipe is the same as the one that I got from the oatmeal box. You'd think the Quaker Oats website would have the same recipe thay put on their boxes.
