What are Lunchbox Mini Chocolate Chip Cookies?

This is the best chewy cookie that your kids (and the whole family!) will love! They are theperfect size to fit into school lunchesand one batch of this cookie dough will make around 50 cookies.

What I like to do is bake off a handful of cookies to place into my kid’s school lunchbox for the following day, and then freeze the rest of the dough. You can freeze the dough either in one large disc, or you can make teaspoonfuls, drop them onto a cookie sheet, and freeze the balls individually for quick treats in the future!

This perfect chocolate chip cookie dough is super easy to make and uses simple ingredients that you might already have in your pantry! If you’re trying to cut back on store-bought treats and want to create ‘healthier’ treat options for your kids, this is the way to go. And while these may not be considered ‘healthy cookies’, they have to be much healthier without all of the additives and preservatives.

While I haven’t tried it myself, you could substitute the white flour for whole wheat flour to make the ultimate healthy snack option. If you end up trying that, leave me a comment and let me know how they turned out!

Ingredients:

  • Butter:You’ll only need one stick of butter for these simple chocolate chip cookies.
  • Sugar:Regular white granulated sugar will help sweeten these lunchbox cookies.
  • Brown Sugar:Light brown sugar in addition to the white sugar, will help sweeten and bring a deeper molasses flavor.
  • Egg:You’ll only need one large egg for this recipe.
  • Vanilla Extract:Using Vanilla Extract in sweet recipes helps to enhance the flavors of the other ingredients.
  • Flour:White all-purpose flour is all you’ll need here.
  • Baking Soda:This leavening agent will help these tiny chocolate chip cookies to rise.
  • Chocolate Chips: You can use mini chocolate chips for this recipe if you’d like, but I buy my real chocolate chips in bulk from Costco so I’ll be using regular-sized chocolate chips. I have even roughly chopped my chocolate chips before and they turned out great too!

How to make Lunchbox Mini Chocolate Chip Cookies

Preheat oven to 375 degrees Fahrenheit and prepare a sheet pan with silicone mats or parchment paper and set aside.

In a large bowl, begin to cream your room temperature butter and sugars together with a wooden spoon. You can also use a hand mixer or in a bowl of a stand mixer using a paddle attachment on low speed.

Mix in your egg and vanilla extract and stir until it has a smooth and creamy texture.

To the same large mixing bowl as your wet ingredients, add in your dry ingredients and mix well until the flour and baking soda have thoroughly incorporated.

Now’s the time to add in your chocolate chips! You can use mini chips if you’d like, but I’m using what I always have on hand, and that’s the regular-sized chocolate chips. If you decide to use mini chocolate chips, I would scale back the amount to 1/2 cup.

Using a teaspoon (like an actual teaspoon measuring spoon), begin to drop teaspoonfuls onto your prepared cookie sheet. Bake the cookies for 7-9 minutes, checking at the 7-minute mark so that you don’t overbake them. They should be a beautiful golden brown once they are done baking.

When the cookies have been baked, place the cookie sheet on a wire rack and allow the cookies to cool completely. Enjoy!

Storage and Freezing Instructions

To store your lunchbox mini chocolate chip cookies, store cookies in a ziplock bag or in an airtight container. They will last on yourcountertop for up to 4 days.

You can freeze your unbaked cookie dough by forming your dough into a disc and wrapping your dough disc in plastic wrap and placing it in a ziplock freezer bag.

Alternatively, you can freeze the dough into bite-size cookies by placing teaspoonfuls onto a baking sheet and placing it in the freezer. Once the dough balls have frozen completely, move them into a ziplock freezer bag. The cookie dough will last in thefreezer for up to 2 months.
