As you know, we are big fans of making simple swaps to make healthier cookies — and this Valentine Sugar Cookies recipe is no exception. With just a few simple ingredients likely already in your pantry, you can pull these together just in time for Valentine’s Day. Of course, you can make this recipe anytime and use it for just a fun get together or any holiday.

  1. Almond flour – The main ingredient in these cookies is almond flour, not be swapped for almond meal. Almond flour is finely sifted and will make these cookies soft and chewy. Almond flour also contains a lot of nutrients and vitamins to include: vitamin E, magnesium and fiber. We like using Anthony’s Organics.
  2. Coconut oil – You know we LOVE using organic, unrefined, cold-pressed coconut oil. You can now find this in most local grocers. The brand we trust and use the post is Nutiva.
  3. Maple syrup – A wonderful swap for refined sugar — we love to use maple syrup — but you can also use honey or date syrup. Both will give these cookies a little different taste.
  4. Vanilla and Almond extract – If you’re not an almond extract fan, you can swap this for a little bit more vanilla extract. Just look for pure 100% extract on the ingredient label.

How to Make our Healthy Valentine Sugar Cookies Recipe

You definitely want to follow along with the 6 steps below to ensure these cookies come out the best. With the few ingredients, it does require a little extra attention. Follow along for best results:

#1: In a medium size mixing bowl, combine the almond flour, melted coconut oil, maple syrup, extracts and sea salt using a hand mixer or stand mixer until just combined. The dough may appear lumpy.

#2: Use a silicone spatula to form a large ball of dough.

#3: Cut 2 pieces of unbleached parchment paper about 13″x16″. Place one piece of parchment paper onto a solid surface, add the dough and top with the other piece of parchment paper. Using a rolling pin, roll out the dough until it’s even. Place in the fridge for about 10 minutes for it to firm up.

#4: While the dough chills, set the oven for 350 degrees. Remove the dough from the fridge and cut into shapes.

#5: Carefully move the dough from the surface to a baking pan.

#6: Bake for 7-9 minutes until the cookies are slightly golden brown. Cool for 20-30 minutes and frost.

Make Coconut Butter Frosting in Minutes

I will admit, this frosting is not super-sweet, but it is delicious, healthy and only requires a few minutes. We like to use the Nutiva brand of coconut butter, also known as coconut manna. It’s loaded with healthy nutrients and makes this frosting come together nicely.

  1. In a heavy duty saucepan, add the coconut butter, almond milk and maple syrup over low heat. Using a stainless steel whisk, stir until smooth for about 3-5 minutes.
  2. Remove from heat and whisk in the vanilla extract and natural food coloring, of your choice. Add some natural sprinkles for a little more pizzazz!
