Salsa is the perfect summer treat, since most of the ingredients you need to make it are growing right outside in your garden! Salsa can be sweet, savory, spicy, and even refreshing on a hot summer day, and when paired with corn chips makes the perfect lazy afternoon snack. More than just a dip, salsa can be used to spice up hot dogs, burgers, sausage, and even grilled vegetables. It is easy to make, easy to store, and easy on your budget. So now the question is, why wouldn’t you want to whip up a large batch this summer? It is the perfect item to bring to a cookout or just to have on hand for your evening meals! Below, you will find an easy to follow recipe for Sweet and Savory Summer Salsa.

Why not make a party out of it and gather the family to help? This recipe does require some food prep with all of the produce involved, so gather the kids and spouse to help wash and chop. If you wish, you can even gather canning jars to store your salsa when finished. This way, you always have a fresh jar on hand when you need one. With the jar storage method, you can also make some batches spicier than others by adding additional peppers. Brilliant!

For best flavor, use different varieties of tomatoes. This not only adds more color to your salsa, but it adds a greater depth of flavor.

Ingredients

  • 8-10 large tomatoes, any variety, diced
  • 1 pint cherry tomatoes, any variety, diced
  • 1 red onion, diced
  • 2 yellow bell peppers, diced
  • 1 green pepper, diced
  • 2 medium sized cucumbers, diced.
  • 2 cloves of fresh garlic, minced well
  • 1-2 small jalapenos peppers, minced
  • ½ cup fresh cilantro, chopped well
  • Juice of 1 lime
  • Juice of 1 lemon
  • Salt and pepper to taste

Directions

  1. Wash all produce well, pat dry with a paper towel, and cut as indicated. Some items will be minced, others diced. The variety of cuts will build the chunkiness and body of your salsa.
  2. Mix all of the listed ingredients together.
  3. Stir well so that all of the ingredients have had the chance to mingle.
  4. Taste. What else does your salsa need? For more sweetness add additional yellow peppers and cucumber. For more savory add additional garlic, cilantro, and tomato.
  5. Once the salsa is as desired, cover your bowl with plastic wrap and allow it to set in the refrigerator for 2-3 hours. The longer it sits, the better the flavor will be!

If you wish to have spicier salsa, you can add additional jalapeno peppers. If you wish to have a more mild variety, you can leave out the jalapenos all together or just add ½ of one. Remember, you can always taste your salsa and add more as you go to build your flavor gradually.
