Sugar Free Low Carb Valentines Day Cookies

This is a great idea for a Valentines day cookie.
I like that this cookie can be made low in carbohydrates as well.

Did you try my Sugar Free Red Velvet Cupcake recipe?

That recipe is another red sugar free dessert recipe that would work for Valentine's day.
This red sugar free recipe however, is an easier recipe to make and is for a cookie.

This recipe calls for a baking mix which is used to simplify the dry ingredients in this recipe. Here are some more Keto, Sugar Free, and Low Carb baking mixes that you may be interested in with other recipe ideas.

This recipe is for anyone asking can I eat a cookie on keto.

The short answer is yes, you can eat a cookie on keto.
However, not every cookie is friendly to the keto or low carb diets.

To make a cookie keto friendly, you need to use keto friendly ingredients.

Keto friendly ingredients should not add carbohydrates, or very few, to a recipe.
To keep this recipe keto friendly we will be using keto, low carb, and sugar free diet friendly ingredeints.

You also may be asking what is the best flour to use for low carb.

We know that regular all purpose flour and whole wheat flour come with carbohydrates.
These flours also come with gluten which help keep whatever you are baking together.

Many low carb and keto friendly flours do not have gluten in them.
These flours work well with making bread once you include a binder to hold the ingredients together since there is not gluten in the flour.
For this recipe, we will use a low carb flour baking mix that does not need a binder ingredient.

Here are some tips for making low carb cookies.

I mentioned above that this recipe calls for a baking mix that does not need a binder. It is suggested that you do not sub in another flour as this can throw off both the flavor and the other ingredients in this recipe.

Here are some more helpful tips for you.

  1. For best results, use fresh ingredients in this recipe. Using outdated or expired ingredients can have an effect on your cookies.
  2. This recipe has been formulated using Pyure Stevia Blend which has 2:1 ratio with sugar. If you decide to substitute another sugar alternative, use one that also measures 2:1 with sugar. That is, one cup of the sugar alternative as measured is equivalent to two cups of sugar.
  3. This recipe is also formulated using the low carb baking mix Carbquik. Carbquick already has other ingredients such as a leavener. If you use another low carb baking mix, please check the ingredients that are in that baking mix.

You may be wondering how do you cut cookies with a cookie cutter.

The biggest tip that I have is that you can roll out the cookie dough on parchment paper lined baking sheet and then place it in the refrigerator to chill for five minutes or so. This help keep the cookies shaped and from not sticking to the cookie cutters.

By the way, you can find heart shaped cookie cutters in various sizes here.

The ingredients needed to make Sugar Free Valentines Day Cookies.

How to make Sugar Free Low Carb Valentines Day Cookies.

  • Preheat your oven to 350 and prep rimmed baking sheets or cookie sheets for nonstick. I use parchment paper for a recipe such as this one.
  • In a medium mixing bowl, use a whisk or a fork to mix together the Carbquick baking mix with the unsweetened cocoa powder.
  • Next, in a large mixing bowl beat together the butter with the sugar alternative until creamy. Then add the egg and the vanilla extract and mix.
  • For the next step, we will add the dry ingredients from the first bowl to the mixing bowl. Do this by adding half of the dry ingredients at a time, stirring between additions. Then add the food coloring to the bowl and mix until blended. Then fold in the sugar free white chocolate chips.
  • Roll out the cookie dough and cut into shapes. Place the cookies 1 ½ to 2" apart on the prepared sheet and bake for 12-15 minutes or until the edges of the cookies begin to brown. Press the remaining white chocolate chips into the cookies and transfer the cookies to a cookie rack to cool before serving.
