These chicken thighs are the perfect meal prep dinner, especially when all you need to do is set it in the oven and let it do its thing. Chicken thighs are great all year round.

Chicken thighs are always a part of our dinner rotation, and when you read below, you'll learn who I like to roast these on a higher temperature for a very specific amount of time. I'm a big chicken dinner fan, such as my juiciest chicken cutlet recipe, or my chicken francese. No matter the recipe, chicken is an excellent, versatile protein!

Roasted Chicken Thigh Ingredients

What's so great about making this recipe is that you don't need many ingredients. The chicken thighs do most of the work as they roast in the oven, providing you that ultra decadent flavor, tender meat you desire.

  • Bone-in Chicken Thighs: I love using bone-in chicken parts for cooking and slow and low roasting or baking because it adds so much more flavor to the meat.
  • Olive Oil: A few tablespoons is all you need.
  • Seasoning: We love using a seasoning from Primal Palate called New Bae. It's cajun, Southern, all rolled into one spice, with a hint of heat. Perfect for these thighs.

How do I make these chicken thighs?

We're going to break down just how to achieve the juiciest roasted chicken thighs you've ever had in your life.

Preheat the oven to 400º and line a baking sheet with parchment or aluminum foil.Pat dry the chicken thighs and place into a large bowl. Drizzle the olive oil and seasoning and toss to coat the chicken.

Lay the chicken in an even layer on the baking sheet.Place the chicken in the oven and bake for 55 minutes. Let cool 5-10 minutes before serving.

HINT: Add an additional sprinkle of seasoning on top before the thighs go in the oven. This will ensure a nice coating of seasoning on top.

Swaps and Substitutions

Roasted chicken thighs are super versatile, so here are a few options for making this recipe to suit your needs and preferences:

  • Handheld Meal- shred the chicken thighs and add to tacos, quesadillas, salads, or mix with mayo and celery for a quick chicken salad sandwich.
  • Boneless - You can definitely do boneless chicken thighs here, but your bake-time will decrease by approximately 20 minutes.

If you know someone you know does not like skin on chicken (like me), you can remove the chicken skin before baking. It will come out very juicy, just without the skin on top.

Serving Suggestions

I really like making easy and approachable recipes for the week either on the weekend, or early enough during the day so that it's ready for a reasonable dinner time.

  • Meal Prep: Prepare the chicken thighs ahead of time, overnight, and throw them in the oven an hour before dinner, and be ready for dinner in minutes.
  • One and Done Dinner: Throw a few veggies on the same pan as the chicken thighs and you've got a sheet pan ready in just under an hour. If you choose to do this, put the veggies on the pan approximately 20 minutes into the bake time so that they do not burn.

No matter how you do it, these juicy chicken thighs will be perfect each and every time, and will taste absolutely delicious.

How do I store the remaining chicken thighs?

You can place the rest of the chicken in a sturdy tupperware. While I don't suggest freezing these, you will want to consume the remaining chicken within 3-4 days after cooking.

PRO TIP:

Leftovers of these juicy roasted chicken thighs make for a delicious chicken salad or on top of a salad for lunch. Any leftover chicken, shred and save in a bowl. You can plan a few more weeknight meals out of this one recipe.
