This is an incredibly easy chicken crock pot dinner for two that can easily be doubled for larger families.

I just love easy delicious dinner recipes and a version of this dish has been a favorite of mine and Miss Add’s for years. When it is just Miss Add and I for dinner, I have been adding frozen veggies to a box of our favorite Pasta Roni and adding our favorite grilled chicken or broiled pork chops and calling dinner done.

So when I was flipping throughComplete Slow Cooking for Two,I thought we could adapt our a long time favorite concept with one of the chicken dishes in the cookbook.

Easy Chicken Crock Pot Dinner for Two Recipe

Ingredients forEasy Chicken Crock Pot Dinner for Two

  • 6 boneless skinless chicken thighs
  • 2 tablespoons dijon mustard
  • 1 teaspoon paprika
  • 2 teaspoons poultry seasoning
  • salt and pepper to taste
  • 3 tablespoons all purpose flour
  • 1 tablespoon cooking oil
  • ½ cup cooking sherry (or broth)
  • ¼ cup chicken broth
  • 1 cup frozen peas and carrots
  • 1- (5.1 oz) box of Parmesan Cheese Pasta Roni (and the ingredients to prepare it).

How to Make an Easy Chicken Crock Pot Dinner for Two

  1. Place your thighs on a plate under-side up.
  2. Mix together the mustard, poultry seasoning and paprika in a small bowl.
  3. Then brush mixture on the undersides of all the thighs.
  4. Next flip the thighs on the plate and salt and pepper them.
  5. Sprinkle flour all over top of the thighs.
  6. Meanwhile, in a skillet (or browning slow cooker) heat your oil.
  7. Once the oil is hot, place your thighs in the oil flour side down and sprinkle all remaining flour from the plate on top of the thighs.
  8. Once the thighs become golden, flip them in the skillet (or browning slow cooker) and cook for 1 minute.
  9. Remove your thighs from your skillet and place in a 4 quart slow cooker. Then pour the sherry and broth into the skillet to remove any bits.
  10. Pour the liquid from the skillet over the chicken.
  11. Cook on low for 4 hours.
  12. About 15 minutes before serving prepare the Pasta Roni per the box instructions on your stove top, adding the peas and carrots during the first step.
  13. Serve the chicken over the pasta and veggies.

    Just wondering if you didn’t want to use a box mix (rice-a-roni pasta) any thoughts on how to prepare it with some plain old box pasta? We’re trying to ease off the prepared foods because of the sodium … thanks SO much!!

      You could just prepare some regular pasta, drain and stir in some shredded Parmesan cheese and then add a little milk. Hope that helps!

      Hi Kim!

      Chicken breasts are usually tender 4-5 hours on low. Personally, I would use chicken breast tenderloins if I wanted white meat. They could be done in 2-3 hours on low. It all depends on how hot/evenly your slow cooker cooks on low.

    Hi Shirley- We cooked this up in a 4 quart slow cooker. If you are using a larger slow cooker, it will likely reduce the cooking time. Enjoy!

    Since this serves only 2-3, should it be in a small crockpot other than the 6 qt. Crockpot (brand) slow cooker, as relates to it’s cooking time?

    I’m chuckling. Your instructions say “place your thighs on a plate.” My thighs will never fit on a plate!

      Hi Barbara! Chicken breasts will work too, just make sure you cook until tender. I personally prefer chicken tenders when we are crockin’ up white meat. Enjoy!
