This recipe is so simple to throw together. I am a huge fan of dump and go recipes like this Crock Pot Shredded Chicken for Two. Beyond being easy, this recipe tastes great and gives you tender chicken that can be used multiple ways. You can eat it as a main dish just as it is, or you can put it on a salad or in a burrito or on a bun or (fill in the blank with your favorite idea). As an added bonus, my little picky eater has given this main dish her stamp of approval. So, this is great for anyone who needs to feed their own picky eater.

What You Will Need for Crock Pot Shredded Chicken for Two
Ingredients Needed
- 1/2 lb boneless, skinless chicken thighs (or boneless, skinless chicken breast cut into thigh size pieces), trimmed
- 1 1/2 teaspoons ranch dip mix
- 1/2 cup chicken broth
Equipment Needed
- Sharp knife
- Cutting board
- Measuring spoon
- Measuring cup
- 2.5 quart slow cookeror3 quart slow cookeror4 quart slow cooker
- Two forks
Time Needed
- Prep Time: 3 to 5 minutes
- Cooking Time: 1 hour and 40 minutes to 3 hours on low or 50 minutes to 1 hour and 30 minutes on high
- Additional Time: approximately 5 minutes to shred the chicken with two forks

Ingredients
- 1/2 lb boneless skinless chicken thighs or Thighs
- 1 1/2 teaspoon ranch dip mix
- 1/2 cup Chicken Broth or Sherry
Instructions
Place chicken in 2.5 quart, 3 quart OR 4 quart slow cooker and sprinkle with dressing mix.
Pour broth/sherry over chicken.
Cover and cook 1 hour and 40 minutes to 3 hours on low or 50 minutes to 1 hour and 30 minutes on high until chicken easily shreds with two forks.
