I keep thinking that I’ve found my new favorite side dish at Longhorn Steakhouse…and then I try something new, and I stand corrected.

I absolutely LOVE their loaded potato soup. We actually ordered it for takeout several times to make sure we made this copycat recipe SPOT ON.

And let me tell you – spot on it is. Well. That’s a lie. It’s EVEN better. As our family ate this, we all kept commenting on how delicious it is.

It took us a while to figure out how to make the base for this soup – and as we tasted it over and over again, it became clear that it was more a cheddar-based soup than potato. We felt that adding some potato flakes would add some extra potato flavor, but we really wanted to nail the cheddar flavor of it…and nailed it we did.

The unique thing about this soup is that it’s SUPER smooth…yet it has these amazing CHUNKS of potatoes – not mushy at all. It’s so delicious and unlike any other potato soup I’ve had.

This soup is a little more time intensive than some soups, but let me tell ya – it is 100% worth it!

Loaded potato soup is one of the best food creations to ever exist. It’s the perfect meal to keep you warm and cozy during crisp autumn and cold winter days, and who doesn’t love that?

This particular recipe is the closest thing to the Longhorn Steakhouse loaded potato soup that you can get (warning: you might even like it more…don’t say I didn’t warn you)! And the best thing about it, is it has ingredients that all kids love, so they’ll be asking for it again and again!

What is loaded potato soup?

Loaded potato soup is a lot like what it sounds like. The base is a simple potato soup, and you load it up with whatever ingredient you want. The most common ingredients to add are bacon, ham, onions, green onion, sour cream, and cheddar cheese.

How do you thicken loaded potato soup?

This is a super simple problem to solve, all you have to do is add flour, cornstarch, or other thickeners. Thickeners, cornstarch, and flour are starches, which thickens soup and gives it body.

If you have to add any of these starches to your soup, it is suggested to stir a few tablespoons of the starch into a separate bowl before putting it in the main pot. This will combat clumping and help it disperse into the soup equally.

Can you freeze-loaded potato soup?

Unfortunately, potato soup isn’t the best soup to freeze. Because potatoes dry out, they will take the moisture from the soup, leaving the soup extremely thick. It also can take on a grainy texture once defrosted, which is not pleasant to eat.

Instead of the freezer, this soup can stay in the fridge without many difficulties. The good thing is storing the soup likely won’t be a problem since everyone will be asking for seconds!

Ingredients

  • 1/4 cup salted butter
  • 1/4 cup all-purpose flour
  • 3 cups chicken broth
  • 3 cups milk
  • 16 ounces mild shredded cheddar cheese
  • 1/2 cup instant pot flakes
  • 2 large russet potatoes, diced and peeled
  • Salt
  • Pepper
  • Bacon Bits (You can make your own, but if you use store-bought, crisp them up on the stovetop – trust us, it makes a huge difference!)
  • Extra Cheddar (for topping)
  • Green Onions, diced

Instructions

  1. Over medium-high heat, melt butter in a 3-quart sauce pan.
  2. Stir in flour and cook until flour has blended with butter.
  3. Add chicken broth and stir constantly until mixture starts to thicken.
  4. Add in milk and heat until it starts to simmer, stirring the whole time.
  5. Stir in shredded cheese until smooth.
  6. Add in potato flakes.
  7. Add in LOTS of salt and pepper to taste – it really depends on taste, but I used 2 teaspoons of salt and 2 teaspoons of pepper. Start with a little and go up as you need!
  8. Use an immersion blender to blend until smooth, or pour in batches into a blender.
  9. At this point, bring your soup to a light boil and add in your diced potatoes.
  10. Stir constantly but allow potatoes to cook until they are al dente. You want to make sure you keep stirring so the soup doesn’t stick to the bottom of the pot.
  11. Alternatively, you can boil the diced potatoes in a separate pot until al dente and add to soup right before serving.
  12. Serve soup immediately with cheddar cheese, bacon bits, and green onions.
