Beef Tips Recipe

These crockpot beef tips (or instant pot!) are the epitome of comfort food. My family loves a stick-to-your-bones beef tips and and gravy on a chilly night. This delicious brown gravy makes the perfect topped for a bed of white rice, egg noodles or potatoes, making this a classic we keep coming back to.

But since this is made in the slow cooker and instant pot, making this steak tips recipe couldn't be easier. After some basic assembly, you just throw them into the crockpot or electric pressure cooking and let that do all the work for you. And you can also assemble and freeze for a busy night when you don't want the extra hassle of coming up with dinner ideas!

Tips for making Beef Tips

  • When cutting up the beef, try to cut against the grain as much as possible. And be sure to trim as much fat and gristle as you can.
  • If you don't like cooking with alcohol, you can always substitute additional beef broth.
  • If using the instant pot, be sure to do at least 10 minutes of natural pressure release before quick releasing, to tenderize the meat.
  • You can thicken the gravy with a cornstarch slurry on the saute setting of the instant pot or by adding a slurry to the slow cooker for the last 30 minute of cook time and raising the heat to high for that period.

What is the best kind of meat for making beef tips?

Many people like to use stew beef because it's cheap and easy, but I prefer to use sirloin steak that I cut up. In my opinion it's a better cut of beef and cutting it myself allows me to control the size and try to keep all the chunks around the same size for even cooking. You could also ask your butcher to cut the steaks for you to save you the time.

How do you cook beef tips so they're tender?

The beauty of this particular recipe is the equipment you're using. Both the slow cooker and the instant pot will make the steak tips fall-apart-tender! Let the machine do the work for you.

What are beef tips?

Originally they are pieces of the sirloin or the tenderloin that are too small to be part of the steak. For all intents and purposes of this recipe, they're chunks of sirloin steak in a delicious brown gravy.

What are the ingredients for Beef Tips?

  • Sirloin steak, cut into chunks
  • Onion
  • Garlic
  • Beef broth
  • Red wine
  • Worcestershire sauce
  • Soy sauce
  • Water
  • Thyme
  • Kosher salt
  • Black pepper
  • Mushrooms
  • Cornstarch

How to make beef tips

Since this is a dump and go recipe, the process is quite simple:

  1. Cut the sirloin steak in 1 ½ inch chunks
  2. Cut all the vegetables
  3. Place all ingredients into the slow cooker or Instant Pot
  4. Cover and cook for the allotted time
  5. Thicken with a cornstarch slurry (either towards the end of cooking time for the crockpot or after pressure cooking on the saute setting for the Instant Pot).
  6. Serve over rice and devour!

Beef Tips Recipe Upgrades

Although this is designed to be a dump-and-go recipe, here are a few “upgrades” you can make if you have a little extra time on your hands and don’t mind doing a small amount of extra work. You don’t have to do them to have a delicious meal, but they will make this recipe come out even more delicious:

  • Sear the beef chunks before placing it into the slow cooker (if you’re using an instant pot, you can do this on the saute setting).
  • Serve over white rice, egg noodles or mashed potatoes with a crusty slice of bread and a sprinkle of fresh parsley.

Ingredients

  • 2 pounds sirloin steak, trimmed of fat and cut into 1 ½ inch chunks
  • 1 cup onion, diced
  • 2 cloves garlic, minced or pressed
  • 8 ounces mushrooms, sliced
  • 1 14 ounce can beef broth
  • ½ cup red wine
  • 2 Tablespoons Worcestershire sauce
  • 3 Tablespoons soy sauce
  • ¼ cup water
  • ½ teaspoon dried thyme
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • 2-3 Tablespoons cornstarch
  • Cooked white rice, for serving
  • Fresh parsley for garnish, chopped (optional)

Instructions

Slow cooker instructions

  • Place steak tips, onion, garlic, mushrooms, broth, wine, Worcestershire sauce, soy sauce, water, thyme, salt and pepper into slow cooker pot.

  • Stir well to combine.

  • Cover pot and turn heat to low.

  • Cook for 7 ½ hours.

  • Remove cover and take around ¼ cup of broth into a small bowl on the side. Whisk in cornstarch to make a slurry.

  • Stir the slurry into the pot and cover. Turn the heat to high and cook for an additional 30 minutes to thicken.

  • Stir and serving immediately over white rice with a sprinkle of chopped parsley.

Instant Pot instructions

  • Place steak tips, onion, garlic, mushrooms, broth, wine, Worcestershire sauce, soy sauce, water, thyme, salt and pepper into instant pot.

  • Stir well to combine.

  • Cover pot and turn heat to manual high pressure and set it for 20 minutes.

  • When the cook time is up, do a natural pressure release for 10-15 minutes. Then do a quick release. Remove cover and turn off the manual high pressure setting. Turn on the saute setting.

  • Take around ¼ cup of broth into a small bowl on the side. Whisk in cornstarch to make a slurry.

  • Stir the slurry into the pot and simmer for 5 minutes or until the gravy has thickened.

  • Stir and serving immediately over white rice with a sprinkle of chopped parsley.
