What is Banana Bread French Toast?
This incredibly fun breakfast is made with slices of banana bread dipped in a custardy french toast batter and seared in a pan. It’s a classic French toast method, but made with a slice of banana bread as the base. Honestly, it barely needs anything on top, but it’s great with slices of fresh banana, a dusting of powdered sugar, and even a dollop of fresh cream.

Ingredients for Banana Bread French Toast
- Banana Bread – Store-bought or homemade banana bread works just fine. Like most banana bread, this will hold up best if it’s a couple of days old, but even fresh banana bread works just fine.
- Eggs, Milk, Sugar and Cinnamon – Classic French toast ingredients
Recipe Tips
- Use thick slices. Slice the banana bread fairly thick so that it holds together as it sears on the skillet.
- Don’t let it soak too long in the custard. For thicker, stale bread, it’s helpful to let it soak in the custard, but not with banana bread. When dunking the banana bread in custard, work quickly so that the banana bread doesn’t soak up too much of the liquids and fall apart.
- Keep spices and sugar to a minimum. You want the banana bread flavor to shine through, so flavor the custard with just a small amount of sugar and a pinch of cinnamon.
- Use a nonstick skillet or griddle. Avoid any sticking to the pan.
- Keep the heat relatively low. You’ll want low-medium heat to avoid any burning

Ingredients
- 1 loaf banana bread, cut into 8 thick slices
- 3 large eggs
- 3/4 cup milk
- 1 teaspoon sugar
- 1/4 teaspoon ground cinnamon
- Salted butter, for greasing the pan
- Fresh bananas and maple syrup, for serving
Instructions
In a large bowl, whisk together the eggs until frothy. Add milk, sugar, and ground cinnamon until even.
Heat a griddle or large nonstick skillet to low-medium heat.
When the griddle is hot, grease it generously with butter. Working with one slice of banana bread at once (and supporting it on both sides with forks so that it doesn’t fall apart in the custard), dip it in the custard. Let the excess custard drip off and then transfer the banana bread to the hot griddle. Cook the French toast on both sides until golden brown, about 3 minutes per side.
Serve warm with fresh bananas and maple syrup on top.
